We don't blindly chase roast levels. Our primary goal is to showcase the inherent flavors of the raw coffee beans.
We begin by testing the beans using our standard roasting technique to assess their overall profile. After cupping, we determine the desired flavor direction based on the specific characteristics of the beans. We then review and adjust the roasting curve, refining it to find the optimal roast level that best expresses the bean's potential. Our emphasis is on distinct flavors, bright acidity, rich sweetness, and overall balance.
