This batch was produced by two farms, El Encanto and La Claudina, all managed by Juan Saldarriaga. Since Juan is a very groundbreaking coffee producer, Talor insisted on small batch baking, but he went into Juan's raw beans again and again. His two farms are about 60 hectares, but the altitude is from 1400 to 1800 meters. He experimentally planted different varieties of coffee at different altitudes, and tried to distinguish the difference in flavor between old coffee trees and newly grown coffee trees. The Antioquia region is boring in the public's perception, with only a bit of chocolate-flavored coffee. Then, each batch produced by Juan is always so unrestrained and interesting, giving a sensory impact.
For Juan, the damp and cooler environment makes drying extremely difficult. Under the communication between Talor and Juan, he improved the sun-drying scaffolding and installed a smart hair dryer to adjust the air volume according to temperature and humidity at any time. That is to say, under such careful care, his coffee always performed exceptionally.
