We chose “Black Honey” to commemorate International Women's Day on March 8 each year and the importance of women in the workforce. And this is one coffee processing process that they have continued every year since the founding of Ywangan Amayar Women Coffee Group.
The Black Honey processing here is done by collecting ripe cherries in the farmland and sorting them by hand. To take evenly ripe coffee for processing After that, all the cherries will be washed in a washing pond. This is to ensure that all cherry seeds are free of dust or other contaminants before being taken into the peeling process in the next step.
After peeling The coffee will be brought to the factory to dry immediately. This process uses a lot of labor to turn the coffee. So that every coffee bean is dried at the same time and takes time to dry slowly. So that the fermentation and drying processes are consistent. and when the drying is complete You will get a dark honey-colored coffee shell, almost black. We call this process “Black Honey”
The taste in the glass gives the aroma of white flower lover, sweet and juicy, similar to fruits like tamarind, sweet tamarind and a long aftertaste like dried longan.
