Q: Why doesn't boiling water reach 100°C?
A: The boiling point varies with altitude. At higher altitudes, atmospheric pressure is lower, resulting in a lower boiling point.
Additionally, since boiling water is not in a sealed container, most steam escapes upwards.
Therefore, measuring around 98-99°C while boiling is normal.
Q: Why does the water temperature measure only 90°C, or sometimes even less than 90°C, after pouring freshly boiled water into a pour-over kettle?
A: A pour-over kettle is at room temperature. When hot water is added, the container absorbs heat. The less water added, the lower the temperature will be.
