**Mandheling** has become almost synonymous with Indonesian coffee. However, Mandheling is not a region, place name, or varietal. It originates from a phonetic misunderstanding related to the Mandailing people of Sumatra. During the Japanese occupation of Indonesia in World War II, a Japanese soldier, captivated by the coffee's exquisite aroma, asked the owner about its origin. The owner, mistaking the question for an inquiry about his ethnicity, replied, "Mandheling." After the war, Japanese traders imported this coffee to Japan, where it gained immense popularity, thus giving rise to "Mandheling coffee."
To address the issue of a high percentage of defective beans in traditional Mandheling, the Japanese introduced stricter quality control measures years ago, including four rounds of manual sorting and defect removal. This meticulous process yields "Golden Mandheling," characterized by uniform, large beans. Does a larger bean size equate to superior taste? Experience suggests it often does. This may be attributed to the enhanced care taken during the handling of larger, more visually appealing beans, leading to better quality. Furthermore, larger beans tend to roast more evenly, allowing for greater control over flavor development and consistently producing excellent taste and texture.
The **Tim Tim varietal**, also known as Timor, is a natural hybrid of Arabica and Robusta discovered in Timor, Indonesia, in the 1940s. It exhibits strong resistance to leaf rust, tolerates cold temperatures, and is high-yielding. Its robust trees with sturdy trunks and drooping branches efficiently distribute nutrients. The flavor profile is full-bodied with low acidity.

**Coffee Processes**
This refers to the transformation of ripe coffee cherries into dried green beans. Each processing method has its advantages and disadvantages, influenced by the local environment and specific needs, leading each region to adopt suitable methods.
This batch features Sumatra, Indonesia's distinctive semi-washed process, also known as wet-hulling. Due to the humid climate, the coffee cherries undergo initial washing and fermentation. After one to two days of sun-drying, the beans, still containing 30% to 50% moisture, have their parchment layer removed before further drying. This significantly shortens the drying time. Approximately two more days of drying are needed to reduce the moisture content to 12-13%. This unique Indonesian semi-washed process is locally known as Giling Basah.
