What you need for the perfect hand-brewed coffee:
1. Water temperature is the key point
Fill the Stagg pot with water under the handle and heat the water until the thermometer pointer reaches the red zone (approximately 195-205 degrees Fahrenheit / 90-96 degrees Celsius).
2. It is best to use freshly ground coffee powder
To brew a cup of 12oz/354cc coffee, you need 23 grams of coffee beans (about 3 tablespoons). Grind the coffee beans to medium to fine. Please note that the grinding particles must be uniform.
3. Prepare for trickling filter
Put the filter paper into the filter cup, pour hot water to completely soak the filter paper, heat the filter cup, and pour out the water in the container below. Pour ground coffee powder into the filter paper and shake gently to smoothen the coffee powder.
4. Inject water for the first time – steaming is the key
Start pouring water from the center of the filter cup, and pour about 50 grams of water or twice the amount of coffee powder. At this time, you will see the coffee powder gradually expand. Wait for about 30 seconds to "simmer" the coffee and release carbon dioxide.
5. Second water injection – coffee extraction
From the inside out, in a clockwise or counterclockwise direction, slowly rotate from the center of the filter cup outwards and continue to pour water evenly. The process takes about 2 and a half to 3 minutes.
