In Taiwan, the most commonly consumed variety of basil is thyrsiflora, which has reddish-purple stems. Because of its strong flavour, only a small amount is needed to remove meat odours and enhance their fragrance. It puts the finishing touch on a dish and plays a crucial supporting role in popular cuisine.
