We don't blindly chase roast levels. Our primary goal is to showcase the inherent flavors of the green coffee beans.
We begin by testing the beans using our standard roasting technique to understand their overall profile. After cupping, we decide on the desired flavor direction based on the bean's unique characteristics. We then review and adjust the roasting curve, refining it to find the optimal roast profile that maximizes the bean's potential, emphasizing clear flavor notes, bright acidity, rich sweetness, and overall balance.
