We don't blindly chase roast levels. Our primary goal is to reveal the inherent flavors of the green coffee beans.
We begin by testing the beans with our standard roasting method to understand their overall profile. After cupping, we decide on the desired flavor direction based on the bean's unique characteristics. We then refine the roasting curve, adjusting and correcting to find the optimal roast point that maximizes the bean's potential. We emphasize distinct flavors, bright acidity, rich sweetness, and overall balance.
