From extremely rare high-end treasures to fully traceable single origins, grading is as follows:
Gold Label: RARITIES
The Gold Label represents only 10% of the total estate yield, making it exceptionally scarce. Award-winning competition lots are selected from this category, boasting top-tier flavor profiles, distinct and lingering aromas, and delicate texture, making it the preferred choice for international baristas competing.
Red Label: GROWERS RESERVE
Red Label lots constitute 15% of the estate yield, offering outstanding flavor and quality with scores of 88 points or above on the SCA cupping score sheet.
Green Label: SINGLE TERROIR
Batches originate from a single micro-region within Gesha Village, with complete traceability information for each lot, including farm block name, coffee varietal, and processing date.
Gesha Village is located in the Bench-Maji Zone of Ethiopia, spanning 471 hectares with 320 hectares under cultivation. The altitude ranges from 1909 to 2069 meters, with 27% dedicated to conservation areas. Divided into eight blocks based on climate and varietal (Bangi / Shaya / Oma / Shewa-Jibabu / Dimma / Gaylee / Narsha / Surma). The Bench-Maji Zone, situated in southwestern Ethiopia, is one of Ethiopia's two major wild forest coffee regions. Coffee trees in these wild forests are shade-grown, employing natural shade and intercropping methods to achieve sustainable environmental management.

This coffee originates from the birthplace of Gesha coffee worldwide. LUCY GEISHA is undoubtedly the mother of Gesha coffee. The processing station is located in the GEISHA region of Bench Maji, Ethiopia, adjacent to the renowned Gesha Village. Whether it's Panama Gesha, Guatemala Gesha, or Taiwan Gesha, Gesha varietal coffees globally originate from here, which is precisely why this processing station is named "LUCY." Similar to the fossil name Lucy, widely considered the origin of humanity, the Lucy Processing Station aims to carry the mission of promoting Gesha coffee, sharing the world's best and most authentic Gesha coffee with the globe.
The Lucy Processing Station is relatively young. Although it has been in operation for less than 10 years, it already produces flavors that are in no way inferior to those from Central and South American Gesha. This is attributed not only to the growth advantages of the local varietal but also because the soil nutrients and climate of the GEISHA region are perfectly tailored for Gesha coffee. Geisha/Gesha Varietal
Gesha coffee, once named one of the "World's Top Ten Most Expensive Coffees" by Forbes, is a legendary name in the specialty coffee world. There is significant confusion regarding the Gesha varietal, as multiple genetically distinct plant types are referred to as Gesha, many of which share similar geographic origins in Ethiopia. Recent genetic diversity analyses by World Coffee Research have confirmed that the descendants of the T2722 varietal grown in Panama are unique and consistent. When cultivated properly at high altitudes, it correlates with exceptionally high cupping scores and is renowned for its delicate floral, jasmine, and peach-like aromas.
Regarding the name "Gesha/Geisha," the spellings are often used interchangeably due to transliteration, as there is no fixed translation from Ethiopian dialects to English. The coffee was initially recorded with the spelling "Geisha" in cultivation records. For decades, coffee researchers and databases largely maintained this spelling, leading to its initial promotion and use in the coffee industry. The varietal was first collected from a mountain in Ethiopia, the name of which is commonly translated into English as Gesha or Geisha.
In recent years, Gesha varietal cultivation has surged worldwide, achieving great success in major competitions, including in Central American countries like Guatemala, Costa Rica, El Salvador, Colombia, and Peru, typically through propagation from the Panama T2722 varietal. Additionally, many high-altitude regions in Taiwan have begun cultivating Gesha, with higher altitudes generally yielding more captivating flavors.

Coffee Processes
This refers to the method of transforming ripe red cherries into dry green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment and demands of the origin. Therefore, specific processing methods are suited to different regions. The batches on this product page utilize either the Natural or Anaerobic Natural processing methods, briefly described below.
【Anaerobic Process】Anaerobic Fermentation
In a sealed container, coffee cherries are placed in an oxygen-free environment created by carbon dioxide, within a low-temperature setting. This slows down the decomposition of mucilage sugars and the decrease in pH, extending fermentation time to develop better sweetness and a more balanced flavor. Slow, prolonged fermentation can enhance roundness and avoid unpleasant astringency and acetic acid; sealed fermentation also prevents the loss of aromatic compounds. Following anaerobic processing, it is then combined with the Natural process, resulting in the Anaerobic Natural process.
【Natural Process】Natural / Sundried / Dry Processed
Also known as sun-dried or dry processing, this is the most traditional and common method, which does not involve water. Originating in Ethiopia, harvested coffee cherries are dried in the sun before hulling, with the beans still inside. During the prolonged sun-drying process, they absorb the flavors of the husk, pulp, and mucilage, resulting in fuller sweetness and body, and often producing unique aromas.
Coffee producers spread all the cherries on drying beds under the sun, which can be patios or raised drying tables. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this period, the sugars within the fruit and the mucilage clinging to the seeds develop flavors and enhance sweetness. After drying, machines separate the dried pulp and husk from the seeds. Coffees processed naturally are juicy and syrupy, well worth the effort.
