Botanically, the coffee tree belongs to the evergreen genus Coffea in the Rubiaceae family. Coffee beans are the seeds of the coffee tree's fruit, with three main species: Arabica, Robusta, and Liberica. All specialty coffees in the world come from the Arabica species, which itself has various subspecies evolved through hybridization and mutation.

Coffee Processes refer to the transformation of ripe red cherries into dried green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment and local needs. Therefore, each region has its suitable processing method, briefly described as follows:
**【Natural Process】Natural / Sundried / Dry Processed**
Also known as natural drying or non-washed processing, this is the most traditional and common method. It does not involve water during processing. Originating in Ethiopia, harvested coffee cherries are sun-dried before hulling, with the seed still inside. During the prolonged sun exposure, the beans absorb flavors from the skin, pulp, and mucilage, resulting in fuller sweetness, body, and unique aromas.
Coffee producers place all cherries on drying beds under the sun, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this period, the sugars and mucilage adhering to the seeds develop flavors and enhance sweetness. Once dried, machines separate the dried pulp and skin from the seeds. Natural processed coffees are juicy, syrupy, and well worth the effort.
**【Washed Process】Washed / Wet Processed**
Also known as wet processing, before drying, all coffee cherries have their skin and pulp removed. They are then soaked in fermentation tanks to remove the mucilage layer adhering to the seeds, followed by washing with water and drying in the sun or by machine.
The washed process yields a cleaner, crisper cup compared to the natural process. The body is lighter, and the flavors are typically brighter with the vibrant acidity essential for specialty coffee. Fruit notes are still present, and flavors are generally easier to distinguish.
**【Honey Process】Honey / Pulped Natural / Semi-dry Process**
The honey process is a method that combines elements of the natural and washed processes. It was first developed in Costa Rica. Similar to the washed process, the skin and pulp are removed, but instead of fermentation tanks, the beans are sun-dried while retaining the mucilage layer. "Honey" refers not to added honey but to the sticky mucilage layer, which feels like honey, hence the name. The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process; the amount of remaining mucilage determines the sweetness.
The flavor profile of the honey process falls between the natural and washed methods, producing a very unique cup. It is cleaner than the natural process and, due to the residual mucilage, offers richer syrupy sweetness and more pronounced acidity, yet with more body than the washed process.
