▎Eat slowly
People are inevitably connected with food throughout their lives. From street snacks to star-rated restaurants, different culinary landscapes have developed around the world due to geography and culture. On this small treasure island of Taiwan, there are also diverse food factions due to the presence of Han people, Hakka people, indigenous people and even new immigrants.
Many people feel satisfied and happy because of eating. An ancient saying goes: "Every meal should be appreciated for its hard work." To make a meal taste good, countless hands work silently. From the producers of raw materials and the makers of delicious food to consumers like you and me, everyone participates in the diet cycle silently. In the lush rice fields, small farmers work hard before dawn; in the steaming kitchen, chefs cook the ingredients with great skill; in the restaurant, hungry guests choose meals that suit their preferences.
With the rapid advancement of science and technology and industrialization, efficiency and speed are becoming more important in all aspects of life. Modular, simple, and convenient fast food is gradually replacing traditional cooking with complicated steps. However, as a part of the food cycle, we can actually exert influence on these issues through the slow food lifestyle. Therefore, this issue of Xiao Ri Zi is themed on slow food, hoping that readers can slow down their pace in their busy lives, savor every aspect of food, and realize the diversity of local ingredients, food, and culture.
So we followed Taitung Slow Food Festival curator Guo Li-jin to explore the diverse food spectrum of eastern Taiwan and call on the locals to identify themselves; walked into the wild vegetable coffee field of Abi Wild Vegetable Hong Dian Ge to understand the coexistence of ecology and economy; listened to the volunteer mother Xiao La of the tribal vegetable shop share the cooking tips of the Paiwan people, and then took home a lot of natural wild vegetables; watched Yunlin Yu Dingxing Soy Sauce’s third-generation soy sauce maker Xie Yizhe ferment, brew, and sun-dry black bean oil with the sweet aroma of nectar using ancient methods; with the warm hospitality of Shisui Chef Sasha, spent a meal to taste the good taste of local products; and finally, toasted to the people who work hard to live on this land with a glass of Taiwanese gin brewed by Li Jianwei of the Tien Distillery.
"Food is the starting point of a happy life." When we slow down and savor it carefully, we can appreciate the wonderful taste that food brings. It not only satisfies our appetite, but also allows us to use our small power to influence our living environment and protect the diversity of culture and food. In this way, we can realize how happy and lucky we are to be able to taste so many delicious foods in Taiwan, a country with abundant resources.
