Refined salt, on the other hand, undergoes dialysis to remove minerals, leaving behind high-purity sodium chloride with only a simple salty taste, which can be perceived as overly salty. The Zhou Nan Salt Field is located in Budai, Chiayi, one of many salt fields in southern Taiwan. It was established in 1824. By the 1980s, it was at the peak of Taiwan's salt production, yet it still couldn't meet domestic demand and faced competition from cheap imported salt. At that time, to compete with imported salt, Taiwan Salt implemented mechanized operations for the salt fields, forcing salt workers to leave. However, this ultimately failed, and the Budai Salt Field was closed in 2001, followed by the closure of all salt fields the next year, marking the end of Taiwan's sun-dried salt history. Seven years later, the Budai Mouth Cultural Association, along with local veteran salt workers and young people pursuing their dreams, gradually reopened the salt fields. In addition to restoring sun-drying and salt production, they also coexist with the ecosystem, making the area a place that preserves history and continues culture. Zhou Nan sea salt is produced in this environment, relying on the accumulated experience and techniques of veteran salt workers. Taiwan's sun-dried salt history dates back to the Zheng Chenggong period. After centuries of ups and downs, it has finally been passed down to the present day. It would be a shame if it were lost to the past.
