There's considerable confusion surrounding the Gesha varietal due to multiple genetically distinct plant types known by this name, many sharing similar origins in Ethiopia. Recent genetic diversity analysis by World Coffee Research has confirmed that the descendants of the T2722 variety grown in Panama are unique and consistent. When cultivated with meticulous care at high altitudes, this varietal shows a strong correlation with exceptionally high cup scores, renowned for its delicate floral, jasmine, and peach-like aromas.
Regarding the name "Gesha/Geisha," the spellings are often used interchangeably, stemming from phonetic translation as there's no fixed transliteration from the Ethiopian dialect to English. Coffee Processes
This refers to the transformation of ripe coffee cherries into dried green beans. Each processing method has its merits and drawbacks, influenced by the local environment and specific needs, leading different regions to favor particular methods. Here's a brief overview:
**【Natural Process】(Sundried / Dry Processed)**
Also known as the natural dried method or non-washed process, this is the most traditional and common processing method, which does not involve water. Originating in Ethiopia, coffee cherries are sun-dried and then hulled, with the seeds still inside. During the prolonged sun exposure, the beans absorb the flavors of the skin, pulp, and mucilage, resulting in a fuller body and enhanced sweetness, while also developing unique aromatic qualities.
Coffee producers place all the cherries on drying beds under the sun, which can be patios or raised drying tables. Over a period of 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this time, the sugars in the fruit and the mucilage adhering to the seed create flavor and enhance sweetness. Once the coffee is dry, machines are used to separate the dried pulp and skin from the seed. Coffees processed using the natural method are juicy, syrupy, and well worth the effort.

The Honey Process is a method that combines elements of both the natural and washed processes. It was first developed in Costa Rica. Similar to the washed process, the fruit skin and pulp are removed, but instead of using fermentation tanks, the mucilage is left on the bean and dried in the sun. The term "honey" does not refer to the addition of honey but to the sticky nature of the mucilage layer, which feels akin to honey, hence the name. The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process. The amount of mucilage left on the bean directly influences its sweetness.
The flavor profile produced by the honey process falls between that of the natural and washed methods, resulting in a very unique cup. It is cleaner than the natural process and, due to the residual mucilage, offers a richer, syrupy sweetness with more pronounced acidity than the washed process, while still maintaining a fuller body than washed coffees.
