Prerequisites for perfect hand coffee:
1. The temperature of the water is the focus
Fill the water under the handle of the Stagg pot and heat the water until the thermometer pointer reaches the red area (about 195-205 degrees Fahrenheit / 90 degrees Celsius - 96 degrees Celsius).
2. It is best to use fresh ground coffee powder
To cook a cup of 12oz/354cc coffee, you need 23 grams of coffee beans (about 3 tablespoons). The coffee beans are ground to a fine thickness. Please note that the abrasive particles should be uniform.
3. Prepare for drip filtration
Put the filter paper into the filter bowl, pour hot water to completely soak the filter paper while heating the filter bowl, and pour off the water in the lower container. Pour the ground coffee powder into the filter paper and gently shake to smooth the ground coffee.
4. The first water injection – steaming is the key
Pour water from the center of the filter bowl and pour about 50 grams of water or twice the amount of coffee powder. At this point, you will see the coffee powder gradually expand, waiting for about 30 seconds to "steam" the coffee and release carbon dioxide.
5. Second water injection – extracting coffee
From the inside out, in the forward or counterclockwise direction, the water is slowly rotated from the center of the filter bowl to continue the average water injection, and the process takes about two and a half to three minutes.
