Today's star is a masterpiece that harmonizes a century of family heritage with cutting-edge food science—Wush Wush from the Kotowa family's Finca Carolina.
🏞️ A Legendary Beginning: Kotowa & Finca Carolina (1913 - 2026)
In 1913, when Alexander McIntyre first set foot in the volcanic mists of Boquete, Panama, he named this land "Kotowa" (mountains) in the Ngäbere language.
A Century of Heritage: Finca Carolina is not just the birthplace of Kotowa; it's their family's "Flavor Mothership." It houses Panama's oldest wooden processing machines and the very DNA of multiple Best of Panama (BOP) champions (winners in 2006, 2011, 2014).
From Sensation to Science: Under the stewardship of the fourth generation, Victoria Koyner (featured in this post's images), in 2024, Victoria returned to the farm after earning her Master's degree in Food Science from Oregon State University (OSU). She integrated her theoretical knowledge with practical application, directly implementing research models on "flavor chemistry" into Carolina Estate's production management. This approach has led to the emergence of exciting beans beyond Geisha in recent years.
Now, let's delve into the fascinating story of this particular varietal, Wush Wush.
If Geisha is the queen of specialty coffee, then Wush Wush is the mysterious duke from ancient wilds. Its name originates from a small town called Wushwush in the Kaffa region of southwestern Ethiopia. It is not an artificially bred varietal but a "Landrace" left by nature.
The Flow of DNA: In Ethiopia's pristine forests, Wush Wush evolved to adapt to high-altitude challenges, developing exceptionally high concentrations of aromatic compounds and resistance. It wasn't until its introduction to Central America (especially to top estates in Colombia and Panama) that it truly revealed its delicate floral notes, akin to Geisha, but with an added complex layer of mature tropical fruit.
This Wush Wush from Finca Carolina, under Victoria's precise scientific management, exhibits an elegant flavor profile. The depth of its layered complexity rivals Geisha. Importantly, while not inexpensive, given the significant reduction in Panamanian coffee production for the 25/26 harvest season, it presents a compelling alternative compared to Panamanian Geisha. It's delicious, and the price point isn't outrageously inflated!
