Despite a reduced harvest this year due to typhoons and pest issues from the previous two years, tea estate owner Mr. Huang Chang-sheng upheld his craftsman's spirit, meticulously picking ripe cherries and tending to each coffee tree.
This year, the estate leveraged the natural advantage of high-altitude diurnal temperature variations, extending the natural sun-drying period and employing an anaerobic natural process to produce coffee with a richer, more complex flavor profile and intense fruit notes.

**Arabica Geisha/Gesha**
Once hailed by Forbes as one of the "World's Top Ten Most Expensive Coffees," the Geisha coffee is a legendary name in the specialty coffee world. There's considerable confusion surrounding the Geisha varietal, as multiple genetically distinct plant types are referred to as Geisha, many with similar geographical origins in Ethiopia. Recent genetic diversity analyses by World Coffee Research have confirmed that the T2722 variety grown in Panama and its descendants are unique and consistent. When managed properly at high altitudes, it correlates with exceptionally high cupping scores and is renowned for its delicate floral, jasmine, and peach-like aromas.
Regarding the spelling of Geisha/Gesha, the terms are often used interchangeably and are related to transliteration, as there is no fixed translation from Ethiopian dialects to English. The coffee was initially recorded with the spelling "Geisha" in planting records, and for decades, coffee researchers and databases largely maintained this spelling, leading to its widespread adoption and use in the coffee industry. This varietal was originally collected from a mountain in Ethiopia, the name of which is commonly translated into English as either Gesha or Geisha.
**Arabica SL28 and SL34**
Developed and named by Scott Laboratories in Kenya in the 1930s, the unique SL28 and SL34 varieties emerged from excellent native forest ecosystems.
SL28 possesses a mixed lineage of French Mission, Mocha, and Yemenia Typica. The initial goal in developing SL28 was to produce coffee beans in large quantities that were both high-quality and resistant to pests and diseases. Although SL28's yield did not meet the expected high volume, its copper-colored leaves and broad, flat beans offer excellent sweetness, balance, and complex flavors, with notable citrus and plum characteristics.
SL34 shares similar flavor profiles with SL28, but in addition to complex acidity and a pleasant sweet finish, its body is heavier, richer, and cleaner than SL28. SL34 has French Mission, Bourbon, and a greater proportion of Typica lineage. Its bean appearance is similar to SL28, but it is more adaptable to sudden heavy rainfall.

This refers to the process of transforming ripe red cherries into dried green beans. Each processing method has its advantages and disadvantages, influenced by local environmental conditions and specific needs. Therefore, each origin has its suitable processing method. **【Natural Process】Natural / Sundried / Dry Processed**
Also known as natural drying or non-washed processing, this method involves drying the harvested coffee cherries in the sun before hulling. During the prolonged sun exposure, the beans absorb the flavors of the skin and pulp, resulting in fuller sweetness and body, and often developing unique aromas.
**【Honey Process】Honey / Pulped Natural / Semi-dry Process**
This method falls between the Natural and Washed processes. After removing the skin and pulp, the mucilage layer is left intact and dried in the sun. The term "honey" refers to the sticky mucilage layer, which feels like honey. The mucilage layer retains a high proportion of sugars and acids, which is key to the Honey Process, producing flavors that lie between those of the Natural and Washed processes.
**【Washed Process】Washed / Wet Processed**
After removing the skin and pulp, the beans are soaked and fermented in fermentation tanks to remove the mucilage layer from the parchment. They are then washed with water, yielding the bright acidity characteristic of specialty coffee.
