The name "Lian Cheng" comes from the family's early "Gān zǐ diàn" (small grocery store), a shop that grew with the neighborhood and was a familiar name from their childhood. This February, JC Coffee's owner revisited the Yin Shan Yu Tea Garden (Alishanwin) at an altitude of 1,450 meters. The sight of hundreds of coffee trees surrounding the estate greeted him. Despite a reduced harvest this year due to typhoons and pest infestations from the previous two years, Mr. Huang Chang-sheng, the tea garden owner, continues to uphold his craftsman's spirit, carefully picking ripe cherries and tending to each coffee tree.
This year, the estate has particularly leveraged the natural advantage of high-altitude diurnal temperature differences, extending the sun-drying period and employing anaerobic natural processing to create a fuller, richer flavor profile with intense fruit notes.

**Arabica Geisha/Gesha Variety**
The Geisha/Gesha coffee, once named one of the "World's Most Expensive Coffees" by Forbes, is a legendary name in specialty coffee. There is considerable confusion regarding the Geisha variety, as multiple genetically distinct plant types are referred to as Geisha, many with similar geographical origins in Ethiopia. Recent genetic diversity analysis by the World Coffee Research Center has confirmed that the T2722 variety planted in Panama and its descendants are unique and consistent. When plants are well-managed at high altitudes, it correlates with exceptionally high cup quality and is known for its delicate floral, jasmine, and peach-like aromas.
Regarding the name Geisha/Gesha coffee, the spellings are often used interchangeably, related to transliteration, as there is no fixed translation from Ethiopian dialects to English. The coffee was initially recorded in planting records with the spelling Geisha, and for decades, coffee researchers and databases have largely maintained this spelling, leading to its widespread promotion and use in the coffee industry. This variety was originally collected from a mountain in Ethiopia, the name of which is commonly translated into English as Gesha or Geisha.
**Arabica SL28 and SL34**
Developed and named in the 1930s by Scott Laboratories, the unique Kenyan varieties SL28 and SL34 were born in excellent native forest ecosystems.
SL28 has a mixed lineage of French Mission, Mocha, and Yemen Typica. The initial goal for developing SL28 was to produce large quantities of high-quality coffee beans that could also resist pests and diseases. Although SL28's yield was not as large as anticipated, its copper leaf color and kidney-bean shape offer great sweetness, balance, and complex flavors, with distinct citrus and preserved plum characteristics.
SL34 has a similar flavor profile to SL28, with complex acidity and a pleasant sweet finish. Its mouthfeel is heavier, richer, and cleaner than SL28. SL34 has French Mission, Bourbon, and a greater proportion of Typica lineage. Its bean appearance is similar to SL28, but it is more tolerant of sudden heavy rains.

Coffee Processes
This refers to the process of transforming ripe red cherries into dried green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment of the origin and differing demands, thus each origin has a suitable processing method. This batch utilizes the washed process, briefly described below.
**【Natural Process】Natural / Sundried / Dry Processed**
Also known as natural drying or non-washed processing, where harvested coffee cherries are sun-dried and then de-hulled. During the prolonged sun-drying period, they absorb the flavors of the skin and pulp, resulting in fuller sweetness and body, and easily creating unique aromas.
**【Honey Process】Honey / Pulped Natural / Semi-dry Process**
This method is between the Natural and Washed processes. After removing the skin and pulp, the mucilage layer is retained and sun-dried. The term "honey" refers to the sticky mucilage layer, which feels like honey. The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process. The resulting flavors fall between those of the Natural and Washed processes.
**【Washed Process】Washed / Wet Processed**
After removing the skin and pulp, the beans are soaked and fermented in a tank to remove the mucilage adhering to the parchment layer. They are then washed with water, resulting in rich acidity, one of the conditions for specialty coffee.
