Just like the sparkling wine produced in the Champagne region of northern France, it can be called champagne. Only the coffee produced in the Cerrado region can be called Cerrado. Cerrado has strict regulations that all green beans need to meet at least 80 points of the boutique coffee evaluation, and at least 800 meters above sea level for cultivation. Cerrado is located at a lower elevation and a flatter ground than the coffee provided by other La Cabra. Many coffee farmers have harvested them on a large scale by machine, but the owner of Macaúba de Baixo, Dimas Alves de Almeida, is afraid to avoid it – he insists on picking the most mature coffee cherries. This year is a good harvest year. When Dimas is handling coffee, the coffee on the scaffolding is thicker than usual, so the drying time takes longer. In order to avoid excessive fermentation caused by sultry heat, Dimas continually flipped the coffee cherry with care, resulting in a clean and sweet flavor.
