**The "Destined Beans" for Lattes**
A truly great latte requires coffee that complements the milk's natural sweetness while offering a rich, smooth flavor that isn't watery. Even better if it has a unique aroma to elevate the experience.
We've selected beans from regions known for their full body and abundant sweetness. These beans maintain their distinct flavors (like berry, wine, or nut notes) even after adding milk. During roasting, we focus on developing the beans' caramelization while minimizing carbonization.
Even with extended steeping, bitterness is not an issue. You can easily adjust the strength to your liking, making it incredibly user-friendly.
**The Convenience of Instant Coffee, the Aroma of Freshly Brewed – Immersion Drip Bags**
Drip bags offer a simple and consistent brewing method.
Through longer immersion, coffee flavors are gently released, and the concentration builds naturally.
Unlike pour-over or drip bags that require careful control of water flow for a rich base, the immersion design makes flavors easier to manage. It's the perfect companion for making lattes at home.

**【How to Make a Latte with Drip Bags】**
**Method 1: Brew Black Coffee First, Then Add Milk**
1. Place a drip bag into a clean container.
2. Pour in hot water at 90–95°C. For one bag of coffee grounds, we recommend about 200–250ml of water.
3. Steep for 8–10 minutes to create the coffee base. Gently agitate the bag before removing to increase concentration.
4. If you prefer a stronger flavor, extend the steeping time.
5. Add milk. Start with a 1:1 coffee-to-milk ratio and adjust to your personal taste.
(Example: 200ml coffee + 200ml milk)
**Flavor Profile:**
A lighter, more refreshing taste, similar to an Americano with milk (or a Starbucks Caffè Misto).
**Method 2: Direct Immersion in Milk**
1. Place a drip bag into a clean container and pour in cold or hot milk.
2. For one 15g bag of coffee grounds, we recommend about 350–400ml of milk.
3. If using hot milk, steep for 15–20 minutes or longer. Gently agitate the bag before removing to increase concentration.
4. If using cold milk, steep for 3–4 hours or longer.
5. You can extend the steeping time according to your preference for a richer flavor.
**Flavor Profile:**
A richer, more intense taste, closer to café-style lattes.
**Helpful Tip:**
• When heating milk, avoid boiling to prevent a skin from forming on the surface and affecting the taste. Heat until small bubbles just begin to appear, then remove from heat.
• If boiling milk in a pot, you can also add the coffee drip bag and heat it together with the milk.
**【Brewing Black Coffee with Drip Bags】**
Besides making lattes, drip bags can also be used to brew black coffee.
**Method 1: Hot Brew**
1. Use hot water at 90–95°C (avoid directly boiling water).
2. Steep for about 7–8 minutes, adjusting the time to your preference.
3. For one 15g bag of coffee grounds, we recommend 250–300ml of water.
**Method 2: Cold Brew**
1. Place the coffee drip bag into a clean container.
2. Add room-temperature water in the recommended ratio. For one 15g bag of coffee grounds, use about 250–300ml of water.
3. Refrigerate for approximately 24 hours to obtain delicious cold brew coffee.
After steeping, gently shake the drip bag to ensure the coffee grounds in the center release their flavors evenly, then remove the bag before drinking.
**Notes from the Barista**
The inspiration for this blend came during a visit to "Brooklyn Roasting" in Kitahama, Osaka, Japan. We initially went in just to cool off and grab an iced latte, not expecting much. But inside, the café was filled with stylish Japanese men and fashionable young women.
For trendy places, I usually don't expect the coffee to be exceptional...
However, when our iced latte arrived and we took a sip, we were all captivated by the rich flavor of the base concentrate. It had notes of citrus and caramel sweetness, with a wonderfully wild floral aroma. We absolutely loved it at that moment!
It felt like meeting a cool, aloof person at a club, only to discover they were surprisingly humorous, easygoing, and a great cook – a delightful surprise!
Back in Taiwan, we couldn't stop thinking about that flavor. So, we began developing our own blend, focusing on capturing that slightly wild, alluring sweet aroma. After many trials, we experimented with Mandheling beans, known for their strong spices, and honey-processed beans with heavy fermentation, but they just didn't quite hit the mark.
Finally, we found the perfect combination with Ethiopian Yirgacheffe natural beans and Guatemalan beans. This blend truly captured that essence, and thus, the "Black Wild Donkey" was born.
Since its development, this blend has been quietly available for trial at our Haibin store for over half a year. Customers who enjoy medium-light roasts have generally loved it. We highly recommend it to anyone who appreciates floral and fruity flavor profiles!
**【Frequently Asked Questions FAQ】**
**Q1: I'm lactose intolerant. Can I use oat milk instead?**
Yes, our blend's flavor profile is designed to pair well with dairy without tasting diluted. If you have lactose intolerance or a milk allergy, we recommend using "Oat Milk" or "Lactose-Free Milk."
**Q2: Can I add sugar to my latte? What kind of sugar do you recommend?**
Milk naturally contains lactose, and the coffee beans themselves have a natural sweetness, so it usually tastes great without added sugar. However, a small amount of sugar can sometimes enhance the coffee's subtle fruit notes, or nutty and chocolate flavors, making the tasting experience more enjoyable. If you choose to add sugar, we recommend white sugar, as it is less likely to interfere with the coffee's original taste.
**Q3: If I keep it in a thermos, will prolonged steeping affect the taste? Is it really not bitter even after steeping for a long time?**
We have carefully adjusted the roasting degree and carbonization level, along with a suitable grind size for prolonged steeping. As long as the initial water temperature isn't too high, the flavor remains clean and smooth even after steeping for several hours.
**Q4: What's the difference between this and instant coffee?**
Instant coffee is made by extracting coffee liquid and then dehydrating it into powder. We use ground coffee beans for immersion, which reduces flavor loss during the refinement process, resulting in a more complete taste.
**Q5: Is the drip bag material safe for prolonged steeping?**
We use food-grade filter material with heat resistance, so it won't release any off-flavors even with prolonged steeping.
**Q6: Do I have to add milk?**
Not necessarily. While it's designed for "lattes," it's also clean and smooth when enjoyed as black coffee. However, its flavor profile is particularly suited for pairing with milk.
