These are incredibly handmade, and while they are labor-intensive, they are also truly delicious 🤤. We always say it's exhausting, yet we make them every year 🙃.
The filling starts from dried red beans.
Soaked for a day.
Repeatedly boiled and the astringent water discarded 💧.
Then boiled and filtered again.
Prepared in the style of Japanese confectionery 🇯🇵.
Hand-molding the red bean paste ball by ball ✋, leaving only the smooth paste without the skins.
Finally, stir-fried into a caramel red bean filling.
It has a rich aroma and a distinct bean flavor.
Sweet but not cloying, it's addictive 😍.
The pastry dough ratio is a version we perfected through extensive testing.
It bakes into a beautiful crispness.
