The most fundamental difference between Fujian/Taiwanese style fermented bean curd and the fermented fermented bean curd from other provinces is whether to use hairy tofu. In Taiwan, Fujian and Guangdong, it is customary to use salted and sun-dried tofu sticks, pickled together with koji and rice koji. The koji bacteria are spread on the rice and beans, rather than directly planted on the tofu. In provinces other than Taiwan, Fujian and Guangdong, edamame fermented bean curd is eaten. Mucor mold is directly inoculated on the tofu horns. After fermentation, emulsification and maturity, it is mixed with seasonings, black sesame oil and grain wine and then steeped and brewed for several months.
Different from Taiwanese fermented bean curd, which is sweet and salty, edamame fermented fermented bean curd is about the salty, fresh and mellow kind. There is no need for ready-made rice and bean curd. The process of inoculation, culture, emulsification, sauce seasoning, and maturation of edamame fermented bean curd are all taken care of by craftsmen.
