Bishala, meaning "wind chime" in its original Ethiopian name Bishaan Dawala, is the sister offering to the classic Purple Wind Chime. Carefully selected from the prime high-altitude Guji region, it has sold out with each release for two years following the debut of Purple Wind Chime. True to its name, the beans present clear, bright notes that build upon each other, reminiscent of a crisp, lingering wind chime melody. This echoes the theme of water, creating a dynamic and layered experience.
After years of dedicated work in Guji, we've explored custom honey-processed lots. For the 2023 harvest, at our specially selected high-altitude processing station (2300m), we are introducing a special honey-processed version of Bishala. While honey processing gained popularity after its success in Costa Rica, its adoption has waned. This is partly because the flavor variations are less pronounced compared to other special processes like natural or anaerobic. Furthermore, honey processing involves risks of mold and increased labor costs during drying on raised beds, as the fruit pulp remains attached. For farmers, the price difference often doesn't compensate for these risks and costs, leading fewer farmers to produce honey-processed coffees, which is a regrettable trend.
However, we've discovered over the past few years that Ethiopia is an ideal origin for honey processing. High-quality washed Ethiopian coffees captivate with their bright notes of floral and lemon zest, but their lighter body and higher acidity can be challenging for some traditional coffee drinkers. **Honey-processed Ethiopian coffees, on the other hand, offer increased body and sweetness, while amplifying the characteristic floral, lemon, and peach aromas of Ethiopian coffee. This combination is truly exceptional**, especially when using high-quality coffee cherries from high-altitude regions.
This particular lot has undergone meticulous refinement over several harvest seasons, with significant effort invested in preserving the fruit skin and mucilage during the drying process to achieve a red honey classification. The rich characteristics and aroma of honey processing are evident even in the appearance of the green beans.
