Caramelized Onions
1. Melt the butter in a pan over medium heat, add onions.
2. In the next 40 minutes or so, slow cook the onions to caramelize, scraping and stirring every 3-5 minutes.
3. When the onions are caramelized, sprinkle with a pinch of two grains of salt.
4. Add one tablespoon or two tablespoons of chicken broth at a time and stir evenly with a spatula.
5. Stir the onion for another minute to make sure it turns brown, then remove and heat.
