Ingredients:
Buckwheat noodles, regular noodles, or other types of noodles: 2 portions
You can also prepare shredded carrots, shredded cucumber, cooked bok choy, soft-boiled eggs, or hard-boiled eggs.
Spicy Nut Sauce Seasoning (stir together in a bowl):
Spicy Nut Sauce: 4 tbsp Soy Sauce: 1 tbsp Vinegar: 1/2 tbsp (optional)
Instructions:
1. Cook the noodles in boiling water until they reach your desired tenderness. Drain the noodles, reserving a small amount of the hot cooking water in the pot.
2. After seasoning the spicy nut sauce, add the sauce to the noodles and mix well.
3. Transfer to a serving bowl, add shredded cucumber or cooked bok choy, and top with an egg to complete your spicy nut noodle toss.
