We hope to make a cake with rich cherry aroma and in line with the original concept of Black Forest.
Germany has strict requirements for the production of Black Forest Cake: The National Pastry Management Regulations of 2003 stipulate that "Black Forest Cherry Cake is a cherry wine cream cake with cream filling and cherries. The amount of cherry wine added must be enough to clearly taste the wine. The cake base is made of thin cake with at least 3% cocoa powder or defatted cocoa, or a crispy cake base can also be used. The outer layer of the cake is wrapped with cream and decorated with chocolate chips." Only if the above conditions are met can it be qualified to be called "Black Forest Cherry Cake".
2. Healthy Whipped Cream
The key to making the cake moist is the cream, which must be fresh and weight-free. It is expensive but good for health to use fragrant and easily metabolized animal cream instead of inferior vegetable cream that causes obesity.
3. Wine quality
It is necessary to have enough fine wine in the cake. Good wine can enhance the natural flavor of the cake and no other chemical flavors are needed. However, the cost of wine is very high. It is difficult to make a high-quality chocolate cake with inferior chocolate. Choose VALRHONA 70% estate-grade chocolate with a strong fruity aroma and pair it with cherry wine and fresh cream for a very balanced taste.
Wine Cherry
In order to reproduce the flavor and taste of cherries and prevent them from being soft and mushy, we use high-quality large black cherries imported from the United States and soak them in red wine. The cherries used in each cake absorb the red wine evenly, and the large and crispy cherries are different from the Black Forest cakes on the market which are made with small cherries. It not only presents the cherry flavor, but also exudes a light wine tannin aroma. When it is delivered to your mouth together with the chocolate cake and the cream whipped with cherry wine, the flavor is even more perfect.

**Storage method**
It must be eaten within three days of refrigeration. If you cannot finish it, please store it in the freezer.
