Coffee Processes
This refers to the procedure of transforming ripe red cherries into dried green beans. Each processing method has its advantages and disadvantages, influenced by the origin's natural environment and specific requirements. Therefore, each region adopts suitable processing methods, broadly categorized as follows:
**【Natural Process】Natural / Sundried / Dry Processed**
Also known as natural drying or dry processing, this is the most traditional and common method, requiring no water during processing. Originating in Ethiopia, coffee cherries are harvested and sun-dried before hulling. The seeds remain inside the fruit. During prolonged sun exposure, the beans absorb flavors from the skin, pulp, and mucilage, resulting in fuller sweetness and body, and are prone to developing unique aromas. Coffee producers spread all cherries on drying beds under the sun, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them for even drying and to prevent spoilage. During this period, sugars within the fruit and the mucilage adhering to the seeds develop flavor and increase sweetness. After drying, machines separate the dried pulp and skin from the seeds. Coffee processed naturally is juicy and syrupy, making the effort worthwhile.
**【Washed Process】Washed / Wet Processed**
Also called wet processing, before drying, all coffee cherries have their skin and pulp removed. They are then fermented in water tanks to remove residual mucilage from the seeds. Afterwards, they are washed with water and dried by sun or machine. The washed process results in a cleaner, crisper taste compared to the natural process. The body is generally lighter, and the flavors are typically brighter with the rich acidity essential for specialty coffee. It still exhibits fruity notes and generally allows for easier distinction of flavors.
**【Honey Process】Honey / Pulped Natural / Semi-dry Process**
The honey process is a method that combines aspects of the natural and washed processes. It began development in Costa Rica. Similar to the washed process, the skin and pulp are removed, but instead of using fermentation tanks, the beans are sun-dried with the mucilage layer intact. "Honey" processing does not involve adding honey; the term refers to the sticky mucilage layer, which is as viscous as honey, hence the name. The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process. The amount of remaining mucilage determines the sweetness.
