Coffee Processes
This refers to the transformation of ripe red cherries into dried green beans. Each processing method has its merits and drawbacks, influenced by the origin's natural environment and specific needs. Consequently, each region adopts suitable processing methods, broadly categorized as follows:
**【Natural / Sundried / Dry Process】**
Also known as natural drying or non-washed processing, this is the most traditional and common method, requiring no water during processing. Originating in Ethiopia, coffee cherries are harvested and sun-dried before hulling. The seeds remain within the fruit during this extended drying period, absorbing flavors from the peel, pulp, and mucilage, resulting in fuller sweetness, a richer body, and unique aromas. Coffee producers spread all cherries on drying beds in the sun, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them for even drying and to prevent spoilage. During this time, sugars within the fruit and the mucilage adhering to the seed develop flavor and enhance sweetness. Once dried, machines separate the dried pulp and peel from the seed. Natural processed coffees are juicy and syrupy, well worth the effort.
**【Washed / Wet Process】**
Also called wet processing, this method involves removing the peel and pulp from the coffee cherries before drying. The beans are then soaked in fermentation tanks to remove the mucilage layer adhering to the seed, followed by washing with water and drying in the sun or by machine. Washed processing yields a cleaner, crisper cup compared to the natural process. The body is typically lighter, with brighter flavor expressions and the vibrant acidity essential for specialty coffee. Fruit-like notes are still present, and flavors are often more distinct.
**【Honey / Pulped Natural / Semi-dry Process】**
The Honey process is a hybrid method combining elements of natural and washed processing. It was first developed in Costa Rica. Similar to the washed process, the peel and pulp are removed, but instead of fermentation tanks, the beans are sun-dried with the mucilage layer intact. "Honey" does not refer to added honey; it derives from the sticky mucilage layer, which feels like honey. The mucilage layer retains a high proportion of sugars and acids, which is key to the Honey process. The amount of mucilage left determines the sweetness.
