- The whole cake is made from about two and a half fresh Taiwanese Aiwen mangoes. A large amount of fresh mango cubes are placed on top of the dense and soft chiffon cake. The middle layer is also filled with thick mango slices. It is then topped with a smooth, non-sweet raw milk custard mousse made by the chef using French ELLE&VIRE cream.
