**Traditional motifs and deeds on the table** Like applying ink to a brush and trimming the tips of the ears, I paid soy sauce or cut the sauce. Rather than dividing the uses by partitions, we made each of the two spaces created by adding a height difference in one hollow like an ink, each with its own role. Dishes are served on the hill of the ink (the part where the ink is polished), and sauces and condiments are served on the sea (the part where the ink is accumulated), and enjoyed on one plate. The plate oval is just the right size for arranging dumplings and raw spring rolls. For grilled fish and sashimi, plate long is recommended. Since there is a difference in height on the plate surface itself, the top surface (hill part) of the plate is supported and baked with a foundation called "hama" so that it does not hang down with weight.
