The Breton Caramel Butter Cookie, originally named Kouign-Amann,
is a traditional pastry from Brittany in Western France. In the Breton language, 'Kouign' means pastry 🍰, and 'Amann' means butter 🧈. Thus, a direct translation of Kouign-Amann is 'butter pastry'.
Originating in Douarnenez, Brittany, a region abundant in butter in Western France during the 19th century, legend has it that a baker, faced with a sudden influx of customers and a shortage of goods, used the remaining butter, sugar, and bread dough on hand to create a delicious butter pastry.
However, the traditional Kouign-Amann, with its intense sweetness and rich buttery flavor, could be overwhelming and not easily enjoyed in large quantities. Due to the nature of the dough, it was also not easy to preserve. Consequently, a lighter version, made with a dough similar to that of croissants, was later developed. We offer you this lighter, less sweet rendition.
Ingredients: French Flour, French Butter, Sugar, Milk, Yeast, Fleur de Sel from France
Chocolate: Valrhona Chocolate from France
Pistachio: Pistachio Paste and Nuts from France
Each cookie measures approximately 7x3.5 cm and weighs 120g (with a 10g variance due to handmade production).
Handcrafted by Renaud, originally from Brittany, the sweetness has been adjusted to suit Taiwanese palates.
