Stir-Fried Shrimp and Asparagus
1. Heat a wok or large skillet over medium-high heat with 2 tablespoons of olive oil. Add the shrimp in a single layer and cook for about 3 minutes, turning once.
2. Season the shrimp with 1/4 teaspoon of salt. The shrimp should begin to turn pink and opaque on both sides, but still be slightly undercooked. Remove the shrimp from the skillet and set aside on a plate.
3. In the same skillet, heat another 2 tablespoons of oil over medium-high heat. Add the asparagus and cook until crisp-tender and bright green, seasoning with 1/4 teaspoon of salt (or more, if desired). Add the ginger and garlic, stir-fry until fragrant, about 30-45 seconds more.
