Canet is located in the highest altitude region for coffee cultivation in Tarrazu, Costa Rica. This area is the most densely populated with fruit cultivation in Costa Rica. The estate owner primarily grows passion fruit, with coffee being quite scarce, grown only in a specific area with special care, harvesting only ripe red cherries. The Canet cooperative integrates many small farmers and has its own processing plant.
Costa Rican coffee is known for its lively and beautiful character, featuring rich floral and fruity acidity. The bell-like clarity, brightness, and lingering acidity are particularly classic. Coffee grown at high altitudes has higher sweetness. Lower nighttime temperatures also contribute to slower coffee cherry growth and more concentrated flavors, while longer sun exposure fosters excellent acidity. In addition to the microclimate's influence, the bean varietal and post-harvest processing techniques also play a role.
