Flavours of Memory
The diversity of culinary culture has continuously given rise to a myriad of dining spaces, embodying a vitality that is uniquely Hong Kong.
Traditional "bing sutt" (traditional tea restaurants) are often found in older buildings. Starting in the 1950s, they became one of Hong Kong's most popular eateries, characterized by high ceilings, ceiling fans, booth seating, and mosaic tile decorations. Traditional Chinese desserts require considerable time and effort to prepare, yet their prices cannot match those of Japanese, Korean, or Taiwanese desserts, leading to a decline in shops solely offering Chinese sweets. "Dong gu ting" (mushroom-shaped dai pai dongs) and cooked food centres began offering affordable delicacies to the public in the 1970s, though the former are gradually losing their original essence as large corporations move in.
As both flavours and spaces are constantly evolving, will memories fade with them?
