▌Oriental Bee (Apis cerana)
Distributed throughout South Asia, Southeast Asia, and East Asia, they are also called Asian honey bees, native honey bees, and wild bees. They are native species with strong adaptability to the natural environment and can often survive harsh environmental changes. They are relatively cold-resistant and can leave the nest to visit flowers at 10 degrees Celsius (Western Italian honey bees must be above 14 degrees Celsius before going out to collect). They are one of the most important resources in Taiwan's wild environment.
Although Oriental honey bees have strong working ability, can collect scattered nectar sources, and are resistant to microparticles, crabs, and wasps, they also love new combs, love to gather together, love to bite combs, are afraid of vibration, fear of stimulation, fear of feed shortages, and do not collect gum, so they are not easy to raise artificially. Currently, there are about 700 to 800 professional beekeepers in Taiwan, and more than 90% of them raise Western honey bees introduced from abroad.
▌Tribal beekeeping
In the early days, people from the Yawai tribe all had the habit of raising bees. In addition to collecting nectar and spreading pollen, bees also increase crop yields.
Although it is called "beekeeping", wild bees do not like to live on Wax sheets, so the tribesmen only give them an empty room in a tree hole and let them play freely with the rest of the furniture.
Based on the concept of sustainability, the tribe's beehives are harvested once a year, and in order to avoid changes in the taste, the tribe members will quickly separate the honey from the pupae and pollen.
In previous years, when the harvest was good, one beehive could produce 10 to 20 bottles of honey, but last year, one beehive only produced 2 bottles...

▌Uncapped honey vs. capped honey
The honey that bees have just collected and brought back to the hive contains, in addition to some minerals, the main sugar components are sucrose, fructose and glucose. Because Taiwan is humid and rainy, and the climate is highly variable, most beekeepers must collect honey on the third day. At this time, the honey is sweet and delicious, but it has not been fully brewed by the bees' salivary glands. It is called "uncapped honey" and contains relatively few enzymes that are beneficial to the human body.
However, if the honey is harvested on the 7th to 15th day, the bees' salivary glands will repeatedly add enzymes (enzymes), and the bees will constantly flap their wings to fan out excess water. Finally, the honeycomb will be sealed with beeswax, and the sucrose in it will be converted into small molecule glucose and fructose that are easily absorbed by the human body.
