This is my grandma's private recipe, which uses three main ingredients and follows ancient methods. The fire is controlled at medium or low to simmer black sesame oil and ginger paste to make the ginger flavor smoother. You can taste the full aroma of old ginger but it is not too spicy, and it is very smooth when combined with the mellow aroma of sesame oil. The ingredients are 10-month-old ginger from Taitung, black bean soy sauce brewed using the traditional method of Yunlin, and 100% pure black sesame oil. The ingredients are simple, the shredded ginger and ginger paste are dense and delicate, and the ginger spiciness is mild and not pungent. Just mix it and it will warm your body and mind. It is definitely the favorite warming seasoning for Taiwanese people.

Q: Why do you choose to grind old ginger into fine paste?
A: We specially select old ginger that has been grown in Taitung for 10 months. Different from young ginger with a shorter planting period, old ginger has more fiber and is spicier. We grind the fiber of the old ginger very finely, so you won’t taste any coarse fiber. It tastes very smooth and has a strong aroma. Paired with 100% pure black sesame oil and black bean soy sauce brewed in large jars, the overall taste is sweeter and richer, with bursts of sesame oil fragrance.
