Coffee flavor
The various nutrients in the coffee beans are thermally degraded into various odor molecular structures during roasting, producing flavors similar to various aromas. Good coffee beans have a naturally rich aroma, and at high, medium, and low temperatures, their aroma changes naturally, which is very pleasant and worth savoring.

Although Malawi was once ranked as one of the least developed countries in the world by the United Nations, the coffee here has a unique flavor, sweetness and aroma. The local small farmers grow coffee using the most traditional farming methods. The coffee has a sweet and delicate flavor, rich floral aroma, and a special taste of licorice and spices. Malawi is also a member of the East African Fine Coffees Association (EAFCA) and is promoted at the annual Specialty Coffee Association of America (SCAA) and Specialty Coffee Association of Europe (SCAE) shows, gradually gaining favor among coffee lovers around the world.
Malawi is a landlocked country located in southeastern Africa, bordering Tanzania to the north, Zambia to the west, and Mozambique to the east. It is separated from the country by Lake Malawi, the third largest lake in Africa. This vast natural territory is rich in natural resources and a unique ecosystem.
Although Malawi's coffee industry is short of funds, it is gradually gaining attention in the world coffee market. Its Geisha coffee was introduced from neighboring Ethiopia in the middle of the last century and is now mainly grown in Misuku Mountain, the highest quality producing area in Malawi. The altitude is between 1,700 and 2,300 meters. It has a large amount of weathered parent rock rich in acid. The soil is mostly Brown and dark red clay and sandy soil. The climate is very suitable for the growth of Arabica coffee beans, with an annual rainfall of 1,500 to 2,000 mm.
In Malawi, coffee is grown mainly by smallholders, particularly in the northern regions of Viphya and Nyika Plateaux. The coffee-producing areas of Mount Misuku, especially the Songwe River basin near the border between Malawi and Tanzania, are the main growing areas of Arabica coffee. The coffee beans produced here, such as Agaro and Geisha coffee, are famous for their high quality and high price. This batch of coffee beans has been hand-selected 4 times, and each bean is clean and full, ensuring the highest quality.

Arabica Coffee Varieties - Geisha/Gesha
Geisha coffee, once rated as one of the "Top Ten Most Expensive Coffees in the World" by Forbes, is a well-known legend in the specialty coffee industry. There is significant confusion regarding the Geisha variety, as there are multiple genetically distinct plant types referred to as Geisha, many of which share a similar geographic origin in Ethiopia. A recent genetic diversity analysis conducted by the World Coffee Research Center confirmed that the descendants of the T2722 variety grown in Panama are unique and consistent. When the plant is well managed at high altitudes, it is positively correlated with extremely high cup quality and is known for its delicate floral, jasmine and peach-like aromas.
Regarding the name of Geisha/Geisha Coffee, the spellings Geisha and Gesha are often used interchangeably, which has to do with transliteration, as there is no fixed translation from the Ethiopian dialect to English. Coffee was first recorded in cultivation records as Geisha, and for decades coffee researchers and cultivation repositories mostly maintained this spelling, leading to the spelling being promoted and used first in the coffee industry. The variety was originally collected from a mountain in Ethiopia, whose name is usually translated into English as Gesha or Geisha.
In recent years, the cultivation of Geisha varieties has emerged all over the world and has won good results in major competitions, including Guatemala, Costa Rica, El Salvador, Colombia, Peru and other places in Central and South America. Generally, they are transplanted from the Panama T2722 variety. In addition, Taiwan also has many high-altitude areas where Geisha is grown. Generally, the higher the altitude, the more charming the flavor.

Coffee Processes
It refers to the process of turning ripe red fruits into dry green beans. Each processing method has its own advantages and disadvantages, and is affected by the natural environment and different needs of the origin. Therefore, each origin has its own suitable processing method. This batch uses the water-washing processing method, which is briefly described as follows.
【Washed method】Washed / Wet Processed
Also known as wet processing, before drying, all coffee fruits will be removed from the skin and pulp, and then soaked in water in a fermentation tank for fermentation to remove the pectin film remaining on the seeds. They are then washed with water and dried in the sun or by machine.
The washed coffee has a cleaner, crisper taste than the natural coffee, and is lighter in body than the natural coffee. It usually has a brighter flavor, rich acidity, and fruity flavor, and is usually easier to distinguish.
