The flavors and aromas of fermentation and transformation are always deeply missed. I recall asking my Japanese friend, who was making rice malt at the time, what the most crucial element was. He replied, "A smiling face!" Simple rice, through fermentation, transforms into an array of wonderfully delicious magic.
