Coffee Processes refer to the transformation of ripe red fruit into dry green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment of the origin and local demands, leading to suitable methods for each region. A brief overview is as follows:
**【Natural Process】(Sundried / Dry Processed)**
Also known as natural drying or non-washed processing, this is the most traditional and common method, requiring no water during processing. Originating in Ethiopia, harvested coffee cherries are sun-dried before hulling. The seeds remain inside, absorbing flavors from the skin, pulp, and mucilage during prolonged sun exposure, resulting in fuller sweetness, body, and distinct aromas.
Coffee producers spread all cherries on drying beds under the sun. These beds can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them for even drying and to prevent spoilage. During this time, sugars in the fruit and mucilage adhering to the seed create flavor and enhance sweetness. Once dried, machines separate the dried husk and pulp from the seeds. Natural process coffees are juicy and syrupy, well worth the effort.
**【Washed Process】(Wet Processed)**
Also known as wet processing, all coffee fruit is depulped and de-mucilaged before drying. The beans are then fermented in water tanks to remove residual mucilage, followed by washing with water and drying under the sun or by machine.
The washed process offers a cleaner, crisper mouthfeel compared to the natural process. The body is lighter, typically exhibiting brighter flavor expressions with the rich acidity essential for specialty coffee. It still carries fruity notes and is usually easier to distinguish.
**【Honey Process】(Pulped Natural / Semi-dry Process)**
The Honey process is a hybrid method, combining elements of the natural and washed processes, first developed in Costa Rica. Like the washed process, the fruit is depulped, but instead of fermentation tanks, the mucilage is left on and sun-dried. "Honey" refers to the sticky mucilage layer, which is sweet like honey, hence the name. This mucilage layer retains a high proportion of sugars and acids, which is key to the honey process; the amount of remaining mucilage dictates the sweetness.
The flavor profile produced by the honey process falls between that of the natural and washed processes, yielding a very unique cup. It is cleaner than the natural process and, due to the residual mucilage, has a richer syrupy sweetness and more pronounced acidity, yet it is still fuller-bodied than the washed process.
