Botanically, coffee trees are evergreen trees belonging to the Rubiaceae family, sub-family Coffea. Coffee beans are the seeds of the coffee tree's fruit, with three main species: Arabica, Robusta, and Liberica. These three species cannot interbreed to produce different subspecies. World-renowned specialty coffees originate from the Arabica species, which itself has various evolved, hybridized, and mutated subspecies of Arabica coffee.
▶ Arabica Varietal - Acaia
A rare varietal discovered in Brazil. Its name means "great fruit" in the indigenous Guarani language of South America. Acaia frequently appears in "Cup of Excellence" competitions but is not as common elsewhere. Acaia is a natural mutation of the Mundo Novo varietal. It is well-adapted to Brazil's climate and growing conditions. This varietal appears to thrive at altitudes above 800 meters. The tree develops a triangular shape, allowing for uniform sunlight absorption.
▶ Arabica Varietal - Catucaí 785
First selected by the Brazilian Agricultural Research Corporation (IAC) in 1988, this is a hybrid of Catuai and Icatu, combining high yield with disease resistance. This varietal is widely cultivated in various regions of Brazil, performing exceptionally well in the high-altitude areas of the Espírito Santo state. This batch of Catucaí 785 uses the Pulped Natural process, which retains the natural sweetness of the fruit while exhibiting a clean and layered flavor profile. During the process, the coffee cherries are fermented in a low-temperature environment to maximize the preservation of the varietal's flavor.
▶ Arabica Varietal - Bourbon
One of the varietals closest to its wild ancestors, discovered on Reunion Island (formerly known as Bourbon) off the coast of Madagascar. Bourbon has its unique characteristics, sharing excellent cup quality with Typica, with a wine-like acidity and a sweet finish. It can be distinguished from Typica by the leaves and bean appearance. Bourbon leaves are broader, and the coffee cherries are smaller and grow more densely, resulting in smaller, rounder beans compared to Typica. In Kenya and Tanzania, artificial crosses using Bourbon derivatives have produced the "SL28" and "SL34" varietals, known for their exceptional flavor profiles. While Bourbon has a higher yield than Typica, its harvest period is also 2 years, making it a relatively low-yield varietal.
▶ Arabica Varietal - Catuai
A hybrid of Caturra and Mundo Novo. Caturra trees are short, while Mundo Novo trees are tall. The hybrid's improved height facilitates harvesting. The taste is sweet and pleasant, similar in sweetness to Caturra, with less astringency. It overcomes the drawbacks of poor flavor and taste, offering excellent balance.

Coffee Processes
This refers to the method of transforming ripe red fruit into dry green beans. Each process has its advantages and disadvantages, influenced by the natural environment of the origin and specific needs. Therefore, each origin has its suitable processing method. The batches featured on this product page utilize the Natural process, briefly described below.
**【Natural Process】Natural / Sundried / Dry Processed**
Also known as sun-dried or dry processed, this is the most traditional and common processing method, which does not involve the use of water. Originating from Ethiopia, the harvested coffee cherries are dried in the sun before hulling. The seeds remain inside, absorbing the flavors from the skin, pulp, and mucilage during the extended sun-drying period. This process enriches the coffee's sweetness, body, and develops unique aromatics.
Coffee producers spread all the cherries on drying beds in the sun, which can be patios or raised drying tables. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this period, the sugars and mucilage adhering to the seeds create flavor and enhance sweetness. Once the coffee is dried, machines are used to separate the dried pulp and skin from the seeds. Coffees processed using the Natural method are juicy and syrupy, truly worth the effort involved.
