**Coffee Processes**
This refers to the methods used to transform ripe coffee cherries into dried green beans. Each process has its own merits and drawbacks, influenced by the local environment and specific needs. Different regions often favor distinct processing methods, briefly outlined below.
**【Natural Process】Natural / Sundried / Dry Processed**
Also known as the dry process, this is the most traditional and common method, requiring no water during processing. Originating in Ethiopia, harvested coffee cherries are sun-dried before de-pulping. The seeds remain inside the fruit during this extended drying period, absorbing flavors from the skin, pulp, and mucilage. This process enhances the coffee's sweetness and body, often resulting in unique aromatic qualities.
Coffee producers spread all the cherries on drying beds under the sun, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this time, sugars and mucilage adhering to the seeds develop flavor and sweetness. Once dried, machines separate the dried fruit pulp and skin from the seeds. Coffees processed using the natural method are juicy and syrupy, truly a testament to the effort involved.

**【Washed Process】Washed / Wet Processed**
Also called the wet process. Before drying, all the fruit pulp is removed from the coffee cherries. They are then fermented in water tanks to remove any remaining mucilage from the seeds, followed by washing with water and drying either by sun or machine.
The washed process yields a cleaner, crisper cup compared to the natural process. The body is typically lighter, with brighter flavor expressions and the vibrant acidity characteristic of specialty coffee. Fruit notes are still present, and the flavors are often more distinct and easier to discern.

**【Honey Process】Honey / Pulped Natural / Semi-dry Process**
The honey process is a hybrid method combining elements of the natural and washed processes, first developed in Costa Rica. Similar to the washed process, the fruit pulp is removed, but instead of fermentation tanks, the mucilage is left on to dry in the sun. The name "honey" does not refer to added honey; it comes from the sticky mucilage layer, which has a honey-like consistency. This mucilage layer retains a high proportion of sugars and acids, which is key to the honey process. The amount of mucilage left on determines the sweetness.
The flavor profile produced by the honey process falls between that of the natural and washed methods, resulting in a very unique cup. The texture is cleaner than the natural process, and due to the residual mucilage, it offers richer syrupy sweetness and more pronounced acidity, yet with a fuller body than the washed process.
