Canet is the highest altitude area in the Tarrazu production area of Costa Rica. This batch is the Caturra variety, which is a variant of Bourbon. The flavor has the typical Bourbon fruit flavor. Mozart used this batch of raisin honey. Green bean processing method (double fermentation honey processing)
The coffee berries are first dried into a raisin state, then peeled off to retain more of the pulp, and then dried and fermented with honey. This is equivalent to sun exposure + honey processing. This method allows the coffee to retain more fruity aroma and delicate floral flavor.
